Savory Artichoke Dip (Serves 12)
2 6 ounce jars of artichoke hears
1 cup of mayonnaise
1 cup of parmesan cheese
1 medium sized onion
Pre-heat oven to 350 degrees. Place artichoke hears, mayonnaise, parmesan cheese and onion together in electric blender. Blend until smooth and creamy. Pour into a small baking dish. bake for approximately 30 minutes. serve warm with chips or crackers.
Foil-Baked Fresh Whole Salmon
Ingredients
1 whole fresh salmon
2 ounces of butter
2 bay leaves
Salt and pepper
Directions
Preheat oven to 250 degrees. Clean fish, then put in the middle of a large piece of foil. Add a generous amount of butter to the foil and place bay leaves inside of the salmon. Put more butter on top of the salmon. Season to taste with salt and pepper. Wrap foil over the salmon and place on pan or heat proof plate. Bake in oven for approximately 1 hour.
Spinach Salad
Crisp and refreshing! A salad is always a safe food option for guests. In this recipe, there is bacon. If you are sure your guests are vegetarian, it would be a good idea to exclude the bacon and keep everything else in this recipe.
Ingredients
4 cups fresh baby spinach
4 cups torn iceberg lettuce
1-1/2 cups sliced fresh mushrooms
1/2 pound bacon strips cooked and crumbled
Dressing
1/4 cup red wine vinegar
4 cup chopped red onion
3 tablespoons sugar
3/4 teaspoon salt
1/4 teaspoon ground mustard
1/2 cup canola oil
1-1/2 teaspoons poppy seeds
Directions
In a large bowl, mix spinach, lettuce, mushrooms and bacon.
For dressing, place vinegar, onion, sugar, salt and mustard in blender. While processing, gradually add oil in a steady stream. Place into to a bowl; stir in poppy seeds.
Divide salad among six plates; drizzle with dressing.
